2 large avocados, pitted, peeled and diced
½ cup minced red onion
1 Tablespoon finely chopped fresh tarragon
4 Tablespoons fresh lime juice
1 teaspoon coarse salt
freshly ground pepper
Gently combine the avocados, onions, tarragon, lime juice and salt in a medium bowl. Season with pepper, cover and refrigerate.
