2 ripe bananas
1 cup old-fashioned rolled oats
1 tsp. baking powder
1 tsp. vanilla or maple syrup
½ cup blueberries fresh or frozen
½ cup blueberries to sprinkle atop batter before baking
Preheat oven to 425 degrees and spray a muffin tin with non-stick spray or line with cups. Add bananas, oats, egg, baking powder, vanilla into blender and blend until ingredients evenly distributed. The less you blend the chunkier your muffins will be. Stir, do not blend, blueberries into batter. Pour batter into tin, filling almost to top because these muffins do not rise much. Garnish batter with remaining blueberries. Bake at 425 for 5 minutes and then reduce heat to 375 and bake for 12 more minutes. After muffins look slightly brown, remove from oven and let cool completely.
