Cucumber Sliders and Hummus

Zoe’s Kitchen, Karina Arnold’s go-to lunch place with her mom, Karen, sells their tasty hummus by the register. After buying a container (for the hundredth time), Karina was enjoying it with cucumber and wanted a sandwich, but had no bread. Thus, these cucumber sliders came into existence.

Ingredients: 

½ sliced cucumber
2 slices of deli meat
2 slices cheese
4 cherry tomatoes
4 Kalamata olives
2 tablespoons of hummus
Sliced peppers, carrots, snap peas to dip in hummus  
Pita slices (optional)
Toothpicks

Recipe directions: 

Wash and cut ½ cucumber into about ¼ inch slices. Try to cut an even number of cucumber slices. 

Top ½ of cucumber with deli meat and cheese squares and top with remaining cucumber slices. Place a toothpick through each “slider” and pierce 1 tomato and olive through each toothpick.

Store sliced peppers, carrots, snap peas and pita slices in with sliders. In a small, separate container, dollop hummus for dipping. Keep refrigerated until ready to enjoy.
