Maple Salmon Bites

From Peace Meals

Ingredients: 

1 cup pure maple syrup
1⁄3 cup soy sauce
1½ teaspoons peeled and minced fresh ginger
1 pound skinless salmon, bones removed and cut into bite-size cubes
3 Tablespoons freshly ground pepper
3 Tablespoons black sesame seeds
¼ cup crème fraiche
Sesame rice crackers
Snipped fresh chives

Recipe directions: 

This recipe requires advance preparation. Combine the maple syrup, soy sauce and ginger in a resealable plastic bag. Add the salmon and toss to coat with the marinade; refrigerate for 2 hours. Preheat the oven to 450 F. Lightly oil a foil-lined baking sheet. Mix the pepper and sesame seeds in a small bowl. Press the top of each salmon piece into the pepper and sesame seed mixture and place on the prepared pan. Bake for about 5 minutes. Spread a small amount of crème fraiche onto each of the crackers. Top each with a piece of salmon and chives. Serve immediately. Makes about 35 pieces.
