This is Karina Arnold’s go-to combination for roasting vegetables. She changes up the seasonings occasionally. Her favorite seasoning combinations include lemon pepper, turmeric, garlic and basil pepper.
Washed and sliced vegetables
Olive oil to coat
Rosemary, pepper, garlic and a pinch of salt to season
Preheat oven to 350 degrees. Wash and cut vegetables. Note: the thicker the vegetable, the longer it takes to cook. Coat with olive oil and seasonings. Bake for 35-45 minutes or until slightly browned and fork tender.
