Karina Arnold made two pieces of this toast for a filling, warm lunch while studying for finals.
1 serving smoked salmon (Karina used pre-packaged, smoked salmon slices)
1 slice of bread (Karina used Ezekiel or whole wheat)
4 cucumber slices
1 tsp. vinaigrette (Karina used Raspberry Vinaigrette)
Feta cheese, basil and hemp seeds to garnish (Hemp seeds add extra protein)
Toast bread and add slices of salmon and cheese. Sprinkle seeds and basil and drizzle dressing on top.
