Chocolate Chip Biscotti

Ingredients: 

1 cup (2 sticks) unsalted butter, softened
½ cup sugar, plus additional
1¼ cups light brown sugar
2 teaspoons pure vanilla extract
6 eggs
5½ cups all-purpose flour
2 Tablespoons baking powder
½ teaspoon salt
2 cups semi-sweet chocolate chips

Recipe directions: 

Preheat the oven to 350 F. Line a cookie sheet with parchment paper. Cream the butter, sugar and brown sugar with a mixer on medium speed. Add in the vanilla and eggs, and mix well. On slow speed, gradually add in the flour, baking powder and salt until just blended. Add the chocolate chips to the mixture and stir with a spoon. Knead the dough on a lightly floured surface and form into a ball. Divide the dough into four equal parts and roll each into a 12-inch long loaf. Place the loaves on the prepared cookie sheet approximately 3 inches apart. Lightly brush the top of each loaf with water and sprinkle lightly with sugar. Bake for 25 to 30 minutes or until golden brown. Remove from the oven. Very carefully transfer or slide each loaf off the cookie sheet and onto a cutting board (use the parchment or long spatulas to support the loaves to ensure they do not break or crumble). Let the loaves cool for about 20 minutes. Cut each cooled loaf diagonally into ½ -inch-wide slices. Place the sliced cookies on their sides in a single layer on the same parchment-lined cookie sheet. Bake again for 12 to 15 minutes or until lightly browned. Remove from the oven and cool on a wire rack. Makes 40 biscotti.
