
Avocado Toast with Smoked Salmon and Herbs
4 slices seedy bread
2 avocados
1 lime
1 small cucumber, sliced thin, slices quartered
½ jalapeño, sliced thin (optional)
Leaves of fresh herbs such as rosemary, thyme, mint, cilantro, dill
Flaky salt
Freshly ground pepper
Optional: crushed red pepper flakes
4 slices smoked salmon
Toast the bread slices in a toaster, or, in a skillet over medium heat, toast the bread slices for about 3 minutes, then turn over and toast for another 3 minutes.
Roughly mash the avocado together with the lime, leaving some clumps of avocado for texture. Divide the avocado among the bread slices, and spread it onto the bread. Add the cucumber, jalapeño (if using), herbs, salt, pepper and red pepper flakes. Top each avocado toast with a slice of smoked salmon, and sprinkle with a few more fresh herbs.
