Breakfast Taco Oatmeal Bowl

Ingredients: 

¼ cup steel-cut oats
¾ cup of water
2 Tbsp. shredded white cheese
1 tsp. coconut oil
¼ cup diced peppers
2 Tbsp. chopped onions
1 large egg
¼ avocado slices
Salt, pepper, chili flakes and lemon or lime juice to garnish

Recipe directions: 

Bring ¾ cups of water to a boil on stovetop. Add oats, reduce heat a little and let oats cook for three minutes until water is absorbed. Turn off heat and stir in cheese and a pinch of salt and pepper. In a separate pan, add ½ teaspoon coconut oil over medium-high heat. Add vegetables and cook until they soften for about 2-3 minutes. Spoon vegetables over oats in a separate bowl and add egg to pan with ½ teaspoon coconut oil. Fry egg until the whites are no longer translucent and serve over oatmeal. Garnish with avocado slices, chili flakes and lemon or lime juice.
