
Edamame Herb Hummus
Ingredients:
½ pound frozen, shelled edamame
¼ cup tahini
Juice of 1 lemon
1 small clove of garlic, chopped
¼ cup chopped fresh mint, plus more for garnish
¼ cup chopped fresh dill, plus more for garnish
¼ cup chopped Italian parsley, plus more for garnish
¾ teaspoon kosher salt
½ teaspoon fresh ground pepper

Combine all ingredients in a food processor until the hummus is smooth.
