
Frittata Muffins
Ingredients:
¾ Cup cooked quinoa or couscous
1 zucchini
2 eggs
½ Tbsp. salt
¼ Tbsp. pepper
½ Tbsp. garlic powder
1/3 cup crumbled feta
Chopped pecans to garnish
Recipe directions:
Preheat oven to 350 degrees. Use paper liners or grease a muffin tin. Mix all ingredients in a bowl and pour into 4-6 tins. Sprinkle pecans on top and bake for 20-25 minutes. Remove when eggs are firm and let cool.
Karina likes experimenting with other veggies like chopped onions or diced tomatoes and garnishing with cilantro. Karina also suggests topping muffins with sliced avocado, drizzling hot sauce or dipping into ketchup to add flavor.
