Comfort food can contain lots of veggies, too. This Farmers Market Lasagna recipe, originally published in our November 2008 "Peace Meals" article, calls for fresh baby spinach, shallots, garlic, cherry tomatoes, zucchini and fresh herbs. You can change up the veggies according to your tastes and what you have on hand, but this recipe will help you knock off a bunch of veggies from your Veg Out 2015 checklist.

If you’re not into lasagna, you can easily use spinach in lots of meals or as a side dish. Sautee it with a little bit of olive oil, salt, pepper and garlic for a quick, easy side. Or make a spinach salad with mushrooms, bacon, and a little olive oil.
