We can never have enough easy weeknight dinners in our repertoires, especially when they lean toward healthy while staying firmly rooted in delicious. Time to add Burger Bowls with Special Sauce and Crispy Capers to our lists.

These salad bowls are as easy as seasoning and browning some ground beef and tossing it together with lettuce, pickles, and whatever else you like on your burgers. They’re made extra yummy with a drizzle of special sauce – basically mayonnaise, mustard, and ketchup with a few extras – and a sprinkle of crispy capers that you’ll crisp in the same skillet you’ve browned the beef in. Extra bonus is that leftovers are easy to assemble at lunchtime the next day.

Burger Bowls with Special Sauce and Crispy Capers

For the Special Sauce:
½ cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon ketchup
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon pickle juice
Dash of Worcestershire 

For the Burger Bowls: 
1 pound ground beef
1 teaspoon kosher salt
½ teaspoon freshly ground pepper
1 teaspoon ground cumin
1 tablespoon olive oil
¼ cup capers, rinsed and dried on paper towels
Chopped lettuce (romaine, iceberg, or a mix)
Chopped red onion
Chopped cherry tomatoes
Shredded cheddar cheese
Hamburger pickle slices

In a small bowl, whisk all the ingredients for the special sauce together. Set aside.

Heat a heavy skillet over medium-high. Add the ground beef and break it up with a wooden spoon. Season with salt, pepper, and cumin, and cook until the meat is browned, about 10 minutes. Remove the meat to a bowl and set aside. Add 1 tablespoon olive oil to the same skillet and let it get hot. Add the capers and let them sizzle and crisp until they pop, about 3 minutes. Use a slotted spoon to remove them from the skillet, and place them on a paper towel-lined plate. 

Pile the lettuce in a bowl. Top with the browned beef, red onion, chopped tomatoes, cheddar cheese, and pickle slices. Drizzle the dressing over the top, then sprinkle with the crispy capers.
