Here, he effortlessly melds Southern classics with modern techniques, creating an enticing menu that is out of the ordinary and yet familiar. Take his beef tartare with a dash of miso. Who would have thought? And yet, that bit of fermented soybeans adds a je ne sais quoi that makes you want to take another bite and another bite. Crunchy peanuts give this dish a surprising crunch.
