Part of the fun in the Veg Out challenge is in trying new veggies for the first time. While we may cook with lots of veggies in our diets on a regular basis, it can be fun and exciting to get out of our comfort zones a little. One of the veggies on Recipe for Success’ Veg Out list is nopales – in other words, cactus. Yes, cactus.

Timbal Nopal Salad
Ingredients:
Portobello mushroom
Cactus
Red bell peppers
Zucchini
Squash
Poblano pepper
Toasted almonds
Rosemary
Fresh thyme
Parsley
Garlic
Salt
Pepper
Manchego cheese
Chipotle sauce
Directions:
Roast the vegetables with the fresh herbs and garlic with olive oil, salt and pepper.
Layer the vegetables like lasagna on top of chipotle sauce.
