Mary Nell Lovett’s Avocado, Ruby Reds and Jicama Salad

 

Ingredients

Jicama, peeled and cut into matchstick pieces
Fresh lime or grapefruit juice
Mixed salad greens
Avocados, peeled and sliced
Ruby Red grapefruit, peeled and sectioned
Your choice of dressing: Oil and Vinegar, Cilantro-Lime or Poppy Seed

Directions

Toss jicama pieces with lime or grapefruit juice. Arrange salad greens on a platter or individual salad plates; fan the avocados, grapefruit and jicama over greens. Drizzle with dressing.
