Tweaked from the "Jennifer Aniston Salad" that went viral back in 2022 (the one that Jennifer Aniston herself reported was not actually the salad she ate every day).
Ingredients
1 cup chopped cucumber
1 15-ounce can garbanzos, drained and rinsed
¾ cup cooked quinoa
½ cup chopped watercress or flat-leaf parsley
¼ cup chopped fresh mint
2 tablespoons chopped fresh oregano
½ cup chopped pickled red onion
½ cup crumbled feta
¼ cup roasted pepitas
¼ cup freshly squeezed lemon juice
¼ cup olive oil
Kosher salt and freshly ground pepper
Directions
- In a large bowl, toss the cucumber, garbanzos, quinoa, watercress or parsley, mint, oregano, red onion, feta, and pepitas. In a small bowl, whisk together the lemon juice and olive oil. Pour over the salad and season to taste with kosher salt and freshly ground pepper.
