Penne with Sweet Italian Turkey Sausage and Arugula

12 ounces penne pasta
2 Tablespoons garlic-infused olive oil
1 pound Italian turkey sausage, casings removed
1 large onion, thinly sliced
1 cup grape tomatoes
¼ teaspoon crushed red pepper
Coarse salt
2 cups baby arugula
¾ cup freshly grated Parmesan cheese
1 cup reserved pasta water

Recipe directions: 

Place the pasta in a large pot of boiling water. As the pasta is cooking, heat the olive oil in a sauté pan over medium-high. Add the sausage and brown while breaking it apart until crumbly. Add the onion slices and sauté until transparent, about 5 minutes. Add the tomatoes, red pepper and a pinch of salt to the sausage and onions. Stir to break up the tomatoes slightly. When the pasta is just short of al dente, add the arugula to the sausage mixture and stir to combine. Reserve 1 cup of the pasta water before draining the pasta. Drain the pasta and add it to the pan with the sausage mixture. Raise the heat to high and stir to coat the pasta. Add the cheese and the pasta water to the pan, stirring to create a sauce. Place the pasta in a serving bowl and drizzle with additional olive oil, if desired. Serves 4 to 6.
