Shannon’s Zucchini Bread

 

Ingredients

1 cup sugar
¼ teaspoon baking powder
1 cup brown sugar
1 teaspoon cinnamon
1 cup oil
3 cups flour
2 cups shredded zucchini
½ cup nuts
3 teaspoons vanilla
½ cup coconut
1¼ teaspoons salt

Directions

Mix all together and pour into three greased mini loaf pans and place all in oven. Bake at 325 degrees for 1 hour. Serves 12. Freezes well.
