Summer Watermelon Salad with Honey Orange Vinaigrette

Ingredients: 

Honey Orange Vinaigrette:
¼ cup freshly squeezed orange juice
½ teaspoon minced garlic
2 Tablespoons honey
2 Tablespoons snipped fresh chives
2 Tablespoons apple cider vinegar
½ cup canola oil
2 Tablespoons extra virgin olive oil
Coarse salt and freshly ground pepper

Salad:
2 cups cubed seedless watermelon
1 pint cherry or grape tomatoes, halved
½ cup seeded and diced cucumber
¼ cup pine nuts, toasted
¼ cup crumbled feta cheese

Recipe directions: 

Whisk together the vinaigrette ingredients in a medium bowl; season with salt and pepper. In a large bowl, combine the watermelon, tomatoes, cucumber and pine nuts. Toss with desired amount of the vinaigrette. Sprinkle with the cheese and serve immediately. Serves 4.
