La Ciambella

From Peace Meals

Ingredients: 

3 extra large eggs
1¼ cups sugar
2¼ cups flour
½ teaspoon salt
2 teaspoons baking powder
1 cup heavy whipping cream
1 teaspoon pure vanilla extract (may sub almond or lemon extract)

Recipe directions: 

Preheat the oven to 350˚F. Butter and flour a Bundt or ring pan. Beat the eggs until fluffy. Add the sugar and beat until light yellow. Mix the flour, salt and baking powder in a small bowl. Add the dry mixture to the egg mixture, alternating with additions of the cream. Mix well. Stir in the vanilla. Pour the batter into the prepared pan. Bake for about 35 minutes or until the edges pull away slightly and the center is set. Do not overbake. Allow the cake to cool slightly and invert onto a wire rack. Serve topped with dusted powdered sugar and Strawberries Eric. Serves 8 to 10.
