Veg Out 2015 has begun! Today, we’re focusing on cauliflower, which is similar in looks and texture to broccoli. You can always enjoy cauliflower steamed or roasted as a side dish or thrown into a salad, but also consider substituting cauliflower for potatoes for a less-starchy meal. For example, you can easily use cauliflower instead of potatoes for delicious mashed potatoes.

Mashed Cauliflower
Ingredients:
1 medium head cauliflower, trimmed and cut into small florets (about 6 to 7 cups) 1 tablespoon extra-virgin olive oil Fine sea salt and ground black pepper, to taste
Recipe directions:
Bring a large pot of salted water to a boil. Add the cauliflower and cook until very tender, about 10 minutes. Reserve ¼ cup of the cooking liquid, then drain well and transfer the cauliflower to a food processor. Add oil and reserved water, 1 tablespoon at a time, and purée until smooth. (Or, mash cauliflower with a potato masher.) Season with salt and pepper and serve.
