Ingredients:
Mixed greens (spinach and romaine are my favorite combo)
Strawberries
Blueberries
Toasted pumpkin seeds
Protein: shrimp, chicken or beef (optional)
Goat cheese (optional)
Apple Cider Vinaigrette
Apple Cider Vinaigrette
4 Tablespoons apple cider vinegar
1 teaspoon Dijon mustard
1½ Tablespoons honey or maple syrup
5 Tablespoons olive oil
Salt and pepper to taste
Recipe directions:
Apple Cider Vinaigrette
Whisk all ingredients together. Adjust to taste. Gluten-free, dairy-free and paleo.
Toss all ingredients together. Gluten-free. Paleo and dairy-free if not using goat cheese.
