Best B.L.T. with Hill Country Basil Mayonnaise

Hill Country Basil Mayonnaise:
1 large egg, at room temperature
1 Tablespoon fresh lemon juice
1 teaspoon Dijon mustard
½ teaspoon salt
½ cup vegetable oil
½ cup extra virgin olive oil
1 cup chopped fresh basil
Other Ingredients:
12 slices bread
1 pound bacon, cooked crisp
1 head Boston lettuce
2 large tomatoes, thinly sliced
Hill Country Basil Mayonnaise: Process egg, lemon juice, mustard and salt in a food processor or blender. With machine running, add oils in a thin stream until mayonnaise has thickened. Add basil leaves and process until smooth. Cover and refrigerate. Yields 1½ cups.
Spread Hill Country Basil Mayonnaise on bread and assemble sandwiches using crisp bacon, lettuce and tomatoes.
