Let’s face it: it seems like chocolate is everywhere right now. It’s the week leading up to Valentine’s Day and even if you don’t have a sweet tooth, it’d be a challenge not to reach for something chocolatey and sweet.
These fudge cookies, originally published in our September 2007 issue, are a classic; they’re delicious, quick to make, and include staples you probably already have in your kitchen. You (probably) won’t have to worry about an extra trip to the grocery but can plan to whip these up as an easy dessert for your Valentine’s Day celebration or just something sweet to have around the house this week.
2 cups sugar
3 to 4 Tablespoons cocoa or hot chocolate mix
1 stick butter
1/2 cup milk
5 cups quick oats
1/2 cup peanut butter
1 teaspoon vanilla
Dash of salt
Recipe directions:
Mix sugar, cocoa/hot chocolate mix, butter, and milk in a pot. Bring to a boil and let simmer for a few minutes.
Then add quick oats, peanut butter, vanilla, and salt. Mix well, and then cool. Drop by teaspoonfuls onto greased pan.
