Any Day Chocolate Cake

10 ounces bittersweet chocolate, chopped
1 cup (2 sticks) unsalted butter
5 eggs
1¼ cups sugar
5 Tablespoons all-purpose flour
1½ teaspoons baking powder
Powdered sugar
Fresh whipped cream
Preheat the oven to 325 degrees. Butter and flour a 9-inch springform pan and set aside. Melt the chocolate and butter in a double boiler over medium-low heat until the mixture is blended and smooth. Stir frequently to avoid scalding the chocolate. Cream the eggs and sugar in a large bowl until well blended and beginning to thicken. Sift the flour and baking powder over the egg mixture and stir to combine. Gently fold in the melted chocolate to blend. Transfer the batter to the prepared pan. Bake for 20 minutes, then cover with foil and bake for another 30 to 35 minutes. Uncover the cake and cool in the pan on a wire rack. When completely cool, run a knife around the edge of the cake to loosen the sides. Release the sides of the pan and run a long knife under the cake to separate it from the pan. Transfer to a cake plate, sprinkle with powdered sugar and serve warm with fresh whipped cream. Serves 6 to 8.
