Coolrise Sweet Dough

From Stop and Smell the Rosemary

Ingredients: 

6 to 7 cups all-purpose flour
2 packages dry yeast
½ cup sugar
1½ teaspoons salt
½ cup unsalted butter, at room temperature
1½ cups hot water
2 large eggs, at room temperature

Recipe directions: 

Combine 2 cups flour, yeast, sugar and salt in a large bowl. Stir to blend. Add butter and hot water all at once. Beat with a mixer at medium speed 2 minutes, scraping bowl occasionally. Add eggs and 1 cup flour. Beat at high speed 1 minute, scraping bowl occasionally. Gradually stir in enough remaining flour to make a soft dough that leaves side of bowl. Turn dough out onto a floured board and knead 5 to 10 minutes. Cover loosely with plastic wrap, then a towel. Let dough rest 45 minutes on the board. Punch down.
