Farmers Market Baby Lettuce Salad

 

Ingredients: 

Mixed baby greens
Red wine poached pear (recipe follows)
Spiced pecans (can buy at Central Market)
Crumbled goat cheese
Sherry vinaigrette (recipe follows)

Red Wine Poached Pear
1 bottle red wine
1 cup sugar
4 Bartlett pears

Sherry Vinaigrette
1 small shallot, minced
2 cloves garlic, minced
3 Tablespoons sherry vinegar
2 Tablespoons balsamic vinegar
1 Tablespoons honey
½ cup canola oil
1 teaspoon salt
½ teaspoon black pepper

Recipe directions: 

Toss baby greens with enough dressing to coat. Place greens on plate and top with half of a poached pear, pecans and goat cheese.

Red Wine Poached Pear

Peel and core pears and cut in half. Bring wine and sugar to a boil. Once boiling, add pears and simmer for 25 minutes. Remove from pan and let cool.

Sherry Vinaigrette

Combine all ingredients except oil in blender and blend until combined. Slowly add oil and blend until emulsified.
