Ingredients:
Morgan buys Top Tea brand tea from Phoenicia Specialty Foods in downtown Houston. This recipe makes four cups of tea. You will need one tea kettle and one tea pot, a tea strainer, four clear tea cups/mugs and spoons.
Recipe directions:
Place four teaspoons of loose tea leaves into the tea pot and set aside.
Fill a tea kettle with six cups of cold water. Turn on heat and bring to a boil. Once the water has boiled, pour boiling water over the tea into the tea pot.
Let the tea and the water steep for 5-7 minutes.
Place the tea strainer on top of a mug and pour the tea into the tea cup/mug. Continue with each mug.
Discard strained tea leaves from the strainer.
“The color of the tea is very important and determines its strength, which is why we use clear tea cups,” says Shin. “There will be some extra water in the tea pot, which we use to dilute any of the cups of tea in case a guest wants their tea weaker. If a guest prefers darker tea, we steep it longer. Also, we serve the tea with white or brown sugar cubes for sweetness.
