20 thin round slices pancetta (cured Italian bacon)
4 ounces goat cheese log
2 to 3 fresh pears, cored and sliced into thin wedges
Preheat the oven to 375 degrees F. Place the pancetta slices on a rimmed baking sheet lined with parchment paper. Bake until crisp, about 12 minutes; remove to a paper-towel lined plate. Transfer to a serving platter and top each piece of pancetta with a slice of goat cheese and a slice of pear. Makes 20 pieces.
