Peanut Butter Granola

Ingredients: 

2 cups old-fashioned rolled oats
1 cup wheat germ or wheat bran
1 cup oat bran
½ cup sunflower seed kernels
½ cup hulled pumpkin seeds (pepitas)
½ cup unsweetened shredded or flaked coconut
½ cup slivered almonds
2 teaspoons cinnamon
1 cup creamy peanut butter
½ cup honey
1 cup chopped dried fruit, such as apricots, apples or raisins (optional)

Recipe directions: 

Preheat the oven to 300 degrees F. Line two rimmed baking sheets with parchment paper. Combine the oats, wheat germ, oat bran, seeds, coconut, almonds and cinnamon in a large bowl. Add the peanut butter and honey and combine by hand until the mixture is well coated. Spread the mixture evenly over the baking sheets. Bake, stirring every 5 minutes, until lightly golden brown, which is typically about 20 minutes. Allow the granola to cool to room temperature. Stir in the dried fruit, if desired. Store in an airtight container. Makes 5 cups.
