Savory Shrimp with Tomatoes and Avocados

2 Tablespoons butter
4 Tablespoons olive oil
5 cloves garlic, minced
1½ pounds shrimp, peeled and deveined
¼ cup white wine
1 cup cherry tomatoes, halved
1 Tablespoon chopped fresh basil
1 Tablespoon chopped fresh oregano
1 Tablespoon chopped fresh Italian flat leaf parsley
Coarse salt and freshly ground pepper
1 avocado, pitted, peeled and diced
1 cup rice, cooked according to package directions

Recipe directions: 

Melt the butter in a sauté pan over medium heat; add the olive oil. Sauté the garlic for 1 minute and add the shrimp. Sauté the shrimp until pink. Add the wine, tomatoes and herbs, and season with salt and pepper. Remove from heat and gently stir in the avocados. Serve over the rice.
