Ingredients:
1 10 oz. package baby spinach
1 pint grape tomatoes
1 small red onion or a few green onions, chopped
½ cup chopped dried apricots
1 4 oz. package crumbled goat cheese (or feta)
1 ripe avocado, diced
½ cup chopped pecans or almonds (toasted, optional)
Apricot Vinaigrette
Grilled chicken or salmon (optional)
Apricot Vinaigrette
⅓ cup vegetable oil (olive oil works too)
2 Tablespoons white wine vinegar
2 Tablespoons orange juice
2 Tablespoons apricot jam
½ teaspoon salt
½ teaspoon pepper
Recipe directions:
Apricot Vinaigrette
Whisk together all ingredients in a small bowl. Let sit for about 5 minutes and then toss into the salad.
Place first 7 ingredients in a large bowl, tossing gently. Drizzle with Apricot Vinaigrette, tossing gently to coat. Top with sliced grilled chicken or salmon if desired.
