Steak and Arugula Sandwiches

Ingredients: 

3 filet mignon steaks (about 6 ounces each)
Coarse salt and freshly ground pepper
2 cups fresh arugula
1 Tablespoon olive oil
4 ciabatta rolls or other crusty bread
6 ounces spreadable garlic and herb cheese, such as Boursin    
2-3 vine-ripened tomatoes, sliced

Recipe directions: 

Preheat the grill to medium. Season the steaks with salt and pepper. Grill to desired doneness, about 6 minutes per side for rare. Remove from the grill and allow to rest for 5 minutes. Thinly slice the steaks and set aside. In a small bowl, toss the arugula with olive oil; season with salt and pepper. Slice the rolls and remove some of the soft bread inside to make a shallow well in each piece. Spread the cheese on both sides of the bread. On the bottom layer, place tomato slices and top with the sliced steak and arugula. Add the top half of the bread and press together gently. Serves 4.
