Ingredients:
Watermelon, cubed
Cherry tomatoes (assorted colors are nice), sliced in half or quartered
Fresh mint, chopped
Feta cheese, crumbled or cubed (optional)
2 Tablespoons balsamic vinegar
4 Tablespoons olive oil
Salt and pepper
Recipe directions:
Mix watermelon, tomatoes, mint and feta in a bowl. Whisk vinegar, oil, salt and pepper in another small bowl. Adjust olive oil and vinegar for quantity of salad, using a 2-1 ratio of oil to vinegar. Toss dressing and watermelon.
Gluten-free. Paleo and dairy-free if not using feta.
