B&B Butchers & Restaurant successfully executes a one-two punch – a terrific butcher shop and an attractive, modern, rustic dining room that serves well-prepared steaks, including wagyu beef and kobe beef. B&B is one of only nine U.S. establishments to receive a certificate from Japan's Kobe Beef Association. What does that mean? It allows B&B to serve authentic, certified A5 Kobe beef, which is considered the most heavily marbled and decadent variety of beef. Here, you can compare the different types of marbling, such as Texas wagyu versus Japanese wagyu, and then, Japanese wagyu versus kobe. The differences when compared side by side can be astounding for first-timers, who may conclude that richer isn't always better. It's a matter of personal taste. Some like their steaks to melt like butter, and others prefer a tad of chew. B&B proprietor Benjamin Berg gets it and offers a wide range of cuts and varieties, including an flavorful, 55-day dry-aged prime ribeye – a bargain at $75 for 22 ounces when compared to kobe at $220 for four ounces. But with its intense richness, you probably don't want much more.
