Bite Macarons
Making macarons is a dare, especially in Houston’s soggy climate. These delicate orbs in a multitude of colors and flavors are finicky. Their golden, smooth crust turns into dud-like chews at the hint of humidity. Macarons also demand surgical precision in the sifting of superfine sugar and ground almonds, combined with the beating of egg whites. A misstep and the result is a gritty fistful of chalk. And so, it was a treat (and surprise) to bite into the puffed-up salted caramel and pistachio renditions from Bite (recently opened in the Kroger shopping center). At last, the search for macarons “almost” like those from the venerable Ladurée in Paris is over. Granted, the weather was perfect that day – hardly a hint of humidity, nor a disappointed face at this charming white-gloss dessert-coffee house.
