Warm Winter Salad
Salads aren't just for summertime. This healthy dish including warm, roasted veggies will feel like a comfort-food meal for wintertime but without all the carbs or sugars of typical comfort dishes. The turmeric, vinegar and pepper aid in digestion and bloat while the carrots provide fiber and chickpeas, protein. Note: You can use almond butter in place of the tahini if desired, just make sure it’s natural and creamy. Add more tahini for a creamier dressing, or add more cider for a runnier texture.
