Overnight Oats with Apples and Raisins
We always need breakfast (well, most of us do). But never do we need it more than in summer, when everyone is home together or on vacation together or getting ready for summer jobs. Together.
“Everyone” is going to want breakfast. But the other “everyone” – meaning those of us who were home anyway, fending for ourselves – isn’t always going to want to make the breakfast, every day, later than usual. Because who wants to stop mid-morning to scrounge around in the kitchen to feed people whenever they decide to wake up?
We’ve got the solution: Overnight Oats with Apples and Raisins. This is a breakfast that can be made ahead, left in the fridge, and scooped into bowls at will. No skill required, either of the maker or the scooper. It’s a pour-into-the-bowl-and-stir kind of thing, totally forgiving and completely customizable. We add super-nutritious chia seeds for texture, crunchy apple chunks, and minced dates to sweeten the oats naturally. But you add what you like – dried apricots, berries, banana. You do you.
The bonus of Overnight Oats with Apples and Raisins: it doubles as dessert. Or snack. Or whatever. “Everyone’s” going to love this.
Overnight Oats with Apples and Raisins
½ cup oats
2 tablespoons chia seeds
¼ teaspoon cardamom
¼ teaspoon cinnamon
1 cup almond milk
¼ cup Greek yogurt
2 dates, minced
½ apple, chopped
¼ cup raisins
Slivered almonds, toasted
In a medium lidded container, stir all the ingredients except the almonds together. Cover and refrigerate overnight.
Stir before serving. If the oats seem too thick, you can stir in a little more almond milk until they are the consistency you like. Sprinkle with toasted almonds.
