Honey Toast with Blueberry Compote and Cottage Cheese is my daughter’s creation. In search of something delicious with all the breakfast “supposed-to-haves” – protein, carbs, fruit – she put this combo together at school, then she brought it home for the few days she was here this summer. It was the bonus gift of having her home for a short time between internship and school.

There really is no recipe. It’s more the sort of random combination of ingredients – cottage cheese and toast? and honey? – that makes this toast. And the popping of the blueberries. You will feel like you’ve really cooked up something special, when in reality this toast is just about the quickest and easiest breakfast (or lunch, or snack) around.

 When you make Honey Toast with Blueberry Compote and Cottage Cheese, you will feel like you’ve really cooked up something special, when in reality this toast is just about the quickest and easiest breakfast (or lunch, or snack) around. 

Honey Toast with Blueberry Compote and Cottage Cheese

¼ cup blueberries (or more if you like)
1 tablespoon freshly squeezed lemon juice
1 slice toast (use your favorite bread; we like sourdough or Dave’s Killer Bread Good Seed)
½ cup cottage cheese (more or less)
Ground cinnamon
Honey

Place the blueberries and lemon juice in a small, microwave-safe bowl. Microwave on full power for 45 seconds, or until the blueberries begin to pop and release some juice. Place the toast on a plate, then spoon the cottage cheese over. Pour the blueberries and juice on top. Sprinkle with cinnamon and drizzle honey over the top.
