Who doesn’t need a quick, easy staple in their summer lunch repertoire? Here is one that we have been making on repeat: the Turkey Lettuce Wrap with Havarti and Herbs. It feels like a sandwich with turkey and cheese and a yummy herb dressing, but there’s no bread to weigh it down. There’s also a satisfying crunch that comes from iceberg lettuce and cucumbers. We have added a dressing that is a dijonnaise of sorts, only it includes a little Greek yogurt for extra protein and some minced herbs for a punchy flavor that tastes restaurant-level.

Turkey Lettuce Wrap with Havarti and Herbs

1 tablespoon Greek yogurt
1 tablespoon mayonnaise
½ tablespoon Dijon mustard
1 tablespoon minced scallion
½ tablespoon minced fresh herbs (such as basil, dill, oregano, tarragon)
1 large iceberg lettuce leaf
½ small cucumber, peeled and thinly sliced
Kosher salt and freshly ground pepper
3 slices roasted turkey
1 slice Havarti

In a small bowl, whisk the yogurt, mayonnaise, and mustard together until it is combined. Stir in the scallion and herbs. Lay the lettuce leaf on a plate or cutting board, and spread it evenly with the dressing. Layer in the cucumber slices, and season with salt and pepper. Top with the turkey and Havarti. Carefully roll the lettuce leaf around the filling, and place the seam side down on the plate. Slice the wrap in half.
