Watermelon is the perfect long-weekend fruit. It sits well outside, seemingly staying fresh and cool for hours. This Watermelon with Orange, Honey, and Tarragon Dressing is just our favorite summer fruit dressed up for company.

I don’t think watermelon needs selling to anyone. And the addition of crumbled feta is a natural. But the dressing! Sweet with honey and orange, a bit acidic with apple cider vinegar and Dijon mustard, and herby with (surprise) tarragon, this is a dressing that I want on tomatoes and avocados and maybe even some seedy crackers. Actually, I kind of want to drink it. Is it gross to drink salad dressing? Probably. But try it for yourself. I don’t think I’ll be alone.

Watermelon with Orange, Honey, and Tarragon Dressing

¼ cup orange juice (freshly squeezed is best)
2 tablespoons honey
2 tablespoons apple cider vinegar
1 teaspoon Dijon mustard
¼ cup olive oil
1 tablespoon minced fresh tarragon leaves
1 tablespoon minced chives
¼ teaspoon kosher salt
1/8 teaspoon freshly ground pepper
5 cups cubed seedless watermelon
½ cup crumbled feta

In a small, lidded container, whisk together the orange juice, honey, apple cider vinegar, mustard, and olive oil. Add the tarragon, chives, salt, and pepper. Seal the container and shake until the dressing is combined.

When you are ready to serve, place the watermelon and feta in a large bowl, pour the dressing over, and toss gently.
