“A Taste of Switzerland in Houston” at Le Jardinier
On Friday, November 3 and Saturday, November 4, The Bastion Collection brings together two of its acclaimed chefs – Olivier Jean and Felipe Botero – for a culinary collaboration that celebrates the elegance of Switzerland and the vibrancy of Houston. Chef Olivier, a protégé of legendary chef Joël Robuchon, presides over L’Atelier Robuchon, which was recently awarded a second Michelin star, and Le Jardinier in Geneva, Switzerland. World-renowned chef Olivier will join forces with Le Jardinier’s chef de cuisine Felipe Botero to orchestrate three exclusive dining experiences. All attendees will be gifted with chocolate bonbons from Stettler Castrischer, one of the world’s premier Swiss chocolatiers, to enjoy beyond your time at Le Jardinier.
Friday, November 3 lunch menu
First course: Black Diamond caviar and crab served with avocado, fresh grapefruit and a touch of vanilla
Second course options: Texas-inspired striploin with artichoke and gruyere stuffed macaroni or poached cod with broccoli, celery, matignon and vegetable sabayon
Third course: Swiss meringue with mango sorbet and fruit confit

Second course: Steamed souffle with AOP gruyere, wild mushrooms and Arbois wine
Third course: Texas-inspired striploin with artichoke and gruyere stuffed macaroni or poached cod with broccoli, celery, matignon and vegetable sabayon
Fourth course: Selection of chef Olivier’s most esteemed Swiss cheeses paired with Swiss wine
Fifth course: Swiss meringue with mango sorbet and fruit confit
