Ingredients:
2 Tablespoons oil
3 cups cooked rice, cooled (I use PF Chang’s steamed jasmine rice in the frozen section)
3 green onions, chopped
2 eggs beaten
1 packet Sun Bird Fried Rice Seasoning mix
2 Tablespoons soy sauce
¾ cup chopped chicken
Recipe directions:
In a large skillet heat up the oil on medium high heat and stir-fry the rice and green onions for about 2 minutes. Push rice to the side and scramble the eggs until cooked. Stir into rice. Add the seasoning packet and soy sauce; stir 1 minute. Then add the chicken and serve.
