Ingredients:
2 Tablespoons jerk seasoning
1 Tablespoon curry powder
2 teaspoons red cracked pepper
1 whole chicken, skinless, cut into 8 pieces
1 lemon, thinly sliced
2 cups green peppers, julienned
1 cup onions, julienned
1 teaspoon minced garlic
¼ cup green onions, thinly sliced
1 cup non-fat chicken stock (no MSG)
Salt and pepper to taste
Recipe directions:
Preheat oven to 350. In a small bowl, combine jerk seasoning, curry powder and red cracked pepper and mix well. Sprinkle and rub the chicken pieces well with the seasonings and marinate for three hours in a casserole dish. Place sliced lemons on top of chicken and then sprinkle with green peppers, onions, garlic and green onions. Add chicken stock and cover with foil and bake for 45 to 50 minutes.
