Herb, Radish and Seed Salad is a delicious and surprisingly refreshing reset for 2020.

Who’s ready for a healthy reset? 

It’s a new year – a new decade! – and the perfect clean-slate opportunity to rethink, refresh and get un-stuck. For so many of us, much of that starts in the kitchen. Yes, there are lots of goals (“goals” sounds so much less ominous than “resolutions,” right?) we can all list that will make our lives more meaningful, more organized, more productive and healthier. And one of the simplest first steps to take in all of that is to clean up what we’re making and eating. 

For me, the start of a new year brings an end to not caring about what I’m popping in my mouth. Since Halloween, I’ve tasted all the cookies, eaten all the appetizers and drunk all the wine (and scotch and gin, ahem). With abandon. And it was glorious. But now I’m craving crunch. I want something that makes me feel light, something that gets me going rather than puts me to sleep. And still, I want big flavor. Something bright and crave-worthy in a way that makes cookies just seem passé. 

Herbs fit the bill. Fresh mint and dill and parsley add unexpected flavor that takes this Herb, Radish and Seed Salad from just an Ugh, I’m-on-a-diet salad to something you’ll really want to eat a lot of. Radishes give it a super crispy crunch, and seeds are the amplifier. Spicy arugula and spinach form the base for all this flavor and texture, and a simple lemon vinaigrette brings it all together. 

Herb, Radish and Seed Salad is the quintessential light, flavorful, clean beginning to compliment and encourage all of our goals for the coming year. And I’m going to bet that even when our goals aren’t so top-of-mind (say, in two weeks?), we’ll still be coming back to this salad because it just tastes so darn yummy.

Here’s to a happy, healthy new year!

Herb, Radish and Seed Salad

Ingredients: 

2 cups baby spinach
2 cups baby arugula
1 cup Italian parsley, chopped
½ cup fresh mint, chopped
½ cup fresh dill, chopped
1 scallion, minced
5 or 6 radishes, very thinly sliced
¼ cup pepitas
2 tablespoons toasted white or black sesame seeds
Kosher salt and pepper
Juice from 1 lemon
¼ cup olive oil

Recipe directions: 

Toss the greens, herbs, scallion, radishes and seeds in a medium-sized bowl. Season generously with salt and pepper. In a small bowl, whisk together the lemon juice and olive oil. Pour the dressing over the salad and serve.
