Dressing ingredients:
2 Tablespoons lemon juice (fresh squeezed) 4-6 Tablespoons walnut oil (I like La Tourangelle) ¼ teaspoon salt ⅛ teaspoon ground black pepper
Salad ingredients:
4 cups of baby arugula ¼ cup walnut pieces (toasted) 1 cup cherry tomatoes, halved 1 medium avocado, sliced ¼ cup shaved parmesan
Stir dressing ingredients together and toss together with salad ingredients.
