Avocado Baked Egg
Karina Arnold garnished this Avocado Baked Egg with Tajín Seasoning and pepper and made a side of steamed veggies topped with pineapple salsa.
Ingredients
2 eggs or egg whites
1 large avocado
Lemon juice, chili flakes, salt, pepper, chives or cilantro to garnish (optional based on what flavors you like)
Directions
Preheat oven to 425F and line a baking pan with foil. Scoop out the inside of the avocado, leaving ½ an inch rim. Break the eggs or pour the egg whites into each avocado half.
Sprinkle lemon juice, chili flakes or any seasoning you like over the avocado halves.
Bake for 15 minutes or until the yolks set. Let cool for a minute and then dig in!
