Ingredients:
1 cup softened, unsalted butter or margarine
1 cup brown sugar
1 cup white sugar
2 eggs
1½ cups flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon vanilla extract
2 heavy shakes of cinnamon
3 cups oatmeal (plain, not quick)
1 6-ounce bag of chocolate chips (your preference – we like milk chocolate)
Recipe directions:
Preheat oven to 350 degrees. Mix all ingredients. Mix all dry ingredients together thoroughly before adding wet. Add the oatmeal and chocolate chips last. I like to scoop dough with an ice cream scoop onto cookie sheet so all cookies bake evenly. The larger they are, the softer they will be in the middle. Bake on 350 degrees for 12-15 minutes. They are best when slightly undercooked. Remove from cookie sheet to cool. Makes about 5 dozen small or 2 dozen large. We always double for freezing.
