1 box Trader Joe's pre steamed lentils
1 bag of riced cauliflower (or rice your own)
1 Tbsp. minced garlic
Taco seasoning of your choice
1 can of tomato sauce or diced tomatoes
Crispy or soft taco shells
Grated cheese or avocado
Shredded spinach or lettuce
Spoonful of salsa
In a large saucepan, sauté chopped onion in olive oil until translucent and then add minced garlic and riced cauliflower. Sauté about 10 minutes and add pre steamed lentils and tomato sauce and taco seasoning to your liking. I use paprika, cumin, salt, pepper and some cayenne pepper to taste or a couple of teaspoons of any taco seasoning that I have on hand. Cook for about 10 more minutes until everything is warm and mixed well. Serve in crispy or soft taco shells and top with your favorite toppings.
